Pellet Smoked Whole Duck

Ingredients:

  • 1 whole duck (about 5 pounds)
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 tablespoon smoked paprika
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 2 tablespoons soy sauce

Instructions:

  1. Preheat your pellet smoker to 250°F.

  2. Remove the giblets from the duck and discard. Rinse the duck with cold water and pat dry with paper towels.

  3. In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, dried thyme, dried rosemary, and smoked paprika.

  4. Rub the spice mixture all over the duck, making sure to cover all sides.

  5. Place the duck on the pellet smoker, breast side up. Close the lid and let it smoke for 2-3 hours.

  6. In a small saucepan, mix together the orange juice, honey, and soy sauce. Heat the mixture over medium heat, stirring occasionally, until the honey is melted and the sauce is well combined.

  7. After 2-3 hours of smoking, baste the duck with the orange juice mixture. Continue smoking for another 1-2 hours, or until the internal temperature of the duck reaches 165°F. You can check the temperature with a meat thermometer inserted into the thickest part of the duck.

  8. Once the duck reaches the desired temperature, remove it from the pellet smoker and let it rest for at least 10 minutes before carving.

  9. Carve the duck into pieces and serve with the remaining orange juice mixture as a sauce.
